Adapted from The Ellen Sinclair Cookbook (which is really hard to find these days, why yes, I am smug to have got hold of a copy).


Accessibility - aside from creaming butter and sugar this recipe is very, very simple. Not hard work to stir by hand; and you only need your electric beaters for as long as it takes to cream butter and suger. Simple one-bowl recipe, no faffing about.
Dietary - I made this on margarine, no trouble; vegan versions should work out fine. I suspect GF flour would not work so well, though, they're basically sugar cookies, and my experience with GF sugar cookies has been unsatisfactory.

Measurements are in Australian standards



60g butter, softened
1/2 cup lightly packed brown sugar
2/3 cup self-raising flour
1/2 cup mixed dried fruit
Zest of one orange
2 tbsp orange juice

- Cream butter and sugar
- Stir in flour, fruit, orange zest, orange juice
- Roll into balls of approx 1 tsp, arrange on greased cookie sheet, allowing room to spread
- Bake in moderate oven for 15 minutes (Ellen says 15-20 but mine were crispy at 15, so exercise caution if your oven runs hot)

NOM.

My housemate describes these as "like rich tea biscuits on steroids". This is an accurate description.

I might consider adding nutmeg and cinnamon next time.
